I have a Pit Boss, equal to a Treager. I cook everything on it. Burgers, chicken, veggies, literally everything. It’s extremely versatile. You would have liked it. I’ve used my Broil King gas grill exactly 3 times since I got the Pit Boss.
I think your method will work fine. Keep an eye on the temps and be sure to soak the chips prior to wrapping them. Put the thicker side towards the heat for a more even cook. Or be sure to rotate it. Also remember looking ain’t cooking!! [emoji1787][emoji1787][emoji482][emoji482][emoji482]

The pulp from the zucchini, minus the seeds, red bell pepper, garlic, cream cheese and some grated old cheddar. Would have added onion but the boy doesn’t like onions. If I wasn’t having it with meat, I’d add some browned sausage or seasoned ground beef.

I used to soak 1/2 of the wood chips and the other 1/2 dry, but have since been advised NOT to soak the wood chips.
