I would highly recommend you go 2017/18 GT350. It’s a special car. The Roush is a Mustang GT with American Muscle parts thrown at it. That’s not a bad thing, but it’s not a GT350.
GT350 over that, hands down.

Hmmm. I wonder what brand of vinyl they used. Mine are 3M and holding up really well. The hood was redone but only because I got a new hood two years back.

Then the PPI sounds like a good fit. Easier to find too.
Base GT or maybe PPI if it’s a weekend cruiser. No point in spending the extra on PPII if you’re not going to use the equipment.
If I were looking for something special in the Mustang family at this point, and could get a decent interest rate, it would be a 2017+ GT350.

This Mach 1 will be priced between the Bullitt and the GT350, both which are discontinued, figure low 60's, my guess.
