I've been buying tires from A.I.M. on Dennison in Markham for 25 years. Phil or Max, the owners know their tires inside out and have never steered me wrong.
Recently I bought new Continentals for the Jag on their assurance. I am very happy with them. It turns out F-types are extremely finicky as to what tires work best for them, and they were able to give me the right ones. They also had the best price of 5 shops I checked

Kipling Tire is good and they tighten lug nuts by hand with a torque wrench to spec so no impact wrench goons to worry about.

Reaper, I have heard good reviews about Toronto Tires but they are in the west end (Mississauga).

If you haven’t bought rubber yet then it may be a good time to switch things up a bit and get some wider and/or slightly larger wheels. On a 95 GT they look really good with a 275/40/17 front and 315/35/17 rear. Really fills the back wells up nicely and you can run a Nitto 555g2 and still keep prices relatively reasonable. Alternatively, you could look at running 275/40/17 square setup and the car will be nicely balanced (stock size on 03/04 cobra btw) and handle nicely for track days with less under steer as the car was originally designed to run a square setup.

If budget allows moving up to an 18” setup will modernize the car and give you more tire options. Running a 275/35/18 front and 315/30/18 looks very nice as well. LMR has some really nice options available and they are made for Mustang fitments that shouldn’t really increase unsprung weight.

Just some other options to consider.
