I had big problem boiling my power steering fluid. I ended up running a decent size cooler and good fluid and it's been perfect. I was running stock size crank pulley but have switched to 20% underdrive and I can't say I've noticed any difference in steering fluid temps. So basically screw the bigger pulley and and just run a nice cooler.

Also, I have a GM power steering so maybe my results don't apply lol

Do you have a pic of your cooler set up? What p/s fluid do you use?
Stock engine Fox equipped with the Maximum Motorsports catalog. Now I have lots of Trick Flow stickers.

I do not, It's basically just a decent size transmission cooler mounted in front of the rad. Fluid is redline full synthetic

Cured boiling ps / hydro boost fluid a couple times in the Cobra by simply flushing and filling with ps fluid (not trans fluid). Car came from the factory with a cooler. Rebuilder I've dealt with since the beginning of time swears to use trans fluid if it has a box, ps fluid if it's a rack. He was also a racer.

I ran generic CarQuest brand p/s fluid last track day at TMP. Seemed ok. Plus its only $6 a liter. Took a good 3L to flush out all the old stuff.

I use mopar atf+4 in my car with no issues.
I would run the rack the way it is now and see how it feels before swapping pullies, it’s also common to trim down the pressure relief spring to lessen the amount of assist
