I see the temperature of oil is controlled at temperature above 212 I wonder if my coolant system is kept at 190 if cooler would see any flow. Also the oil filter adapter on the mishimoto kit won't work on mustang's, not sure about this kit...

Depends on the thermostat, some open fully at 180 deg. F.

Mounted in front of the radiator, behind the intercooler. Tight squeeze but fits really well

Yes, it would.
Oil temp is hotter than the coolant temp, so even tho your coolant is exiting the block at 190, your oil is hotter.

One of the 4 jobs of oil is to help provide cooling. An oil cooler greatly helps keep the temps under control. Think about it: you are cooling the oil directly via a cooler instead of indirectly through the engine coolant and radiator.
