Pizza stone? That’s how I make mine. One on the top rack so the heat radiates evenly on the pizza and the pizza on the other stone.

And I barely have room for that. In the kitchen I’ve got a Breville Smart Oven Air (1cb foot) and it takes up a lot of counter space, my stand mixer and Keurig. It’s a small kitchen. My Insta Pot and deep fryer are in the basement as they don’t get used often as well as my cast iron stuff.

Actually...lol I built a water oven. Basically, it's an Igloo cooler(30L) with a hole in the top to insert my Anova heater. This way on longer cooks, there is less evaporation. Leave it on the kitchen floor to save counter space.

I had pizza too. Got it from Chicago Pizza Twist. The pepperoni pizza was okay. Had better at Pizzeria Dei Sassi in Mississauga. That was a damn good pizza. I’ve made home made from scratch and it came close.

Type or roast? Gas or charcoal grill?

Whenever I did a roast on my gas grill I always used the rotisserie. Cooks very even. Usually turned out decent. Used Montreal steak slice and some olive oil as a rub.

gas but no rotisserie.

plan was to use foil wrapped chips over one burner on low and have the roast on the other side to smoke.

thought hard about a Treiger but wasn't sure it would suit the majority of our grilling which is fast and easy stuff mostly. went with an Everdure Furnace instead. Super happy with the quality so far.

I have a Pit Boss, equal to a Treager. I cook everything on it. Burgers, chicken, veggies, literally everything. It’s extremely versatile. You would have liked it. I’ve used my Broil King gas grill exactly 3 times since I got the Pit Boss.

I think your method will work fine. Keep an eye on the temps and be sure to soak the chips prior to wrapping them. Put the thicker side towards the heat for a more even cook. Or be sure to rotate it. Also remember looking ain’t cooking!! [emoji1787][emoji1787][emoji482][emoji482][emoji482]

The pulp from the zucchini, minus the seeds, red bell pepper, garlic, cream cheese and some grated old cheddar. Would have added onion but the boy doesn’t like onions. If I wasn’t having it with meat, I’d add some browned sausage or seasoned ground beef.

Makes sense. You’d want them to give off their aroma and would be harder to do that if they’re soaked. I’d like to get a small charcoal bbq so I can use it as a smoker sometimes. One of those round ones. Weber has a few on sale sometimes.

Leave it to the engineer....hahaha!! Some good info there. I always thought that the reason for wetting the chips was to cause the wood to bring slower creating smoke throughout the entire cook. Obviously a chunk will burn slower than chips so maybe soaking wouldn’t be necessary. The writer speaks to the amount of water absorbed but nothing about having to add more chips because they have burned off and are no longer creating smoke. Every time the lid is opened, smoke and heat will escape making for an uneven and longer cook.

This is one of the main reasons I bought a pellet grill and not a charcoal or stick burner or one that requires adding chips or chunks of wood throughout the cook. Laziness is my first choice!!

I do have a small charcoal grill that I use, but it’s usually for burgers or steak where I want the charcoal flavour but a fair quick cook with a nice sear.

turned out pretty damn good.

needed to stay in a little longer. was aiming for a Medium rare and got rare. because my probe decided part way threw it didn't want to read temp any more.

did a reverse sear, so smoked first then pulled to rest and cranked the bbq up to sear it. only let it rest for 15-20 should have been longer.

Leftovers. Brisket sliced and smoked in a cast iron pan in the juices that I saved from smoking the other day, then put on sandwiches with some fresh provolone cheese and bbq sauce. Leftover stuffed zucchini and ranch popcorn from Willibald yesterday.

I make it. It’s easy. Just takes 7 days to prepare it. It’s literally equal parts water and flour mixed together.

You can make it with any flour. I prefer rye as it has more flavour. Bulk Barn carries stone ground rye flour.

Those pizzas look great. Thick and moist.

I’ve been using store bought dough lately. If you want thick pizza, put the store bought dough in an oiled bowl and cover it in plastic wrap and let it proof in a warm place. It will double. If you want thinner, keep in fridge or use immediately when you buy. If you want super thin, cut in half and roll it out. May not be as big though.

If you’re using a stone in a bbq, you’ll need to rotate the pizza to cook evenly.

I have 2 stones. One gets placed on the top rack in the oven. The heat from the oven element heats the stone which radiates heat evenly on the other stone which is on the middle rack. Also the oven is at 550F. Takes less than 10 minutes to cook a pizza.

Occasionally, when both of us are feeling lazy, we’ll order some Swiss Chalet. The cats go crazy (not that we give them any), but the smell drives them nuts.

Right now, I’m eating Swiss Chalet flavoured chips. They are fairly authentic. I know this because the cats are going crazy!

Rusty loves Swiss Chalet too...and he does get leftovers. When we are considering what take out to get we call it "SC" so as not to excite him. It's to the point where our neighbour even saves some for him when she orders there - now every time he sees here he goes over to see if she has any. We have nick named her the "Swiss Chalet Lady".

No pics however... tonight was fresh Ontario rack of lamb. Coated with extra virgin olive oil/salt and pepper/garlic/rosemary. On the weber for 25 minutes and came out just perfect for medium rare. Sides were parmesan/buttered asparagus and coleslaw. Was delicious!

Wife is making banana bread. And yes, that’s the big Breville Smart Oven Air. 1 cubic foot of space inside. Costs $600 but got it on sale for $400. We use it more than the stove oven as it takes less time to heat up and it uses a timer for everything and will automatically shut off when timer is done. Ton of cooking features. The cutting board on top is specific for this oven. It never gets used. It’s just there so I can store things on top without things melting when it’s in use.

They were lol. Can make a lot of things in an Instant Pot. Great thing about it is you can make pull apart anything. Ribs, roast, a whole chicken. I always have to hold whatever it is I’m pulling out with 2 tongs, otherwise the meat falls off the bone and back into the pot.

Recipe is from buzzfeedtasty on IG. Off the top of my head it’s:

Boil 16oz pasta (I used a little more as the package I had was 500g)
Mix 4 scrambled eggs in pasta, then mix 1/4 cup Parmesan cheese and 1 tsp Italian seasoning in pasta
Then place pasta in spring form pan and shape like a bowl or pie
Add 1 cup ricotta cheese and spread in the middle
Sprinkle 1/2 cup mozzarella over ricotta
Add 1 cup pasta sauce or marinara and spread over
Sprinkle 1/2 cup mozzarella and sprinkle 1/2 cup Parmesan
Bake 45 minutes at 350

Pretty easy.

Interesting - just got a call from a restaurant I tried yesterday and they wanted to find out whether my experience was good, and whether I had any feedback on the food. I'm sure they're doing this as they are relatively new (a few months I think) but shows the investment they are putting into menu quality and experience. I hope that continues. They'll be positioned upper-mid to lower high end pricing based on the facility they are located at so I'm curious to see how it all develops (never heard of Mt. Alverno before even though I've lived in Caledon for a long time - new facility being finished at the location at Heart Lake Rd and Highway 9). I dont ever remember to take pictures but we both had to work today so the wife threw 2 racks or ribs in the crock pot
Usually do that for ease when working and then finish them on the grill. Can be tricky to keep them together.
Sure enough when she pulled them out the bones all fell out and it was just a pile of moist delicious meat. She was grumbling about wanting ribs today, but I said no worries. Threw the meat pile in the cast iron skillet added some seasoning. And put it on the bbq that was already going to bake some potatos. Got a nice crisp on some of the bits and then piled the meat on buns with some smoked havarty and sauce.

Damn that’s how I’m eating ribs from now on.

Bonus when they threw in the chocolate ganache-mocha almond with mango compote as a bonus. Dinner on the deck with a great big Cali red we picked up in Paso Robles a few years ago.

wife and kids out for ths evening. get home from work check the fridge for some grub. find me a chink of left over Filet roast we smoked on the weekend. DONE!

sliced it thick. Quick fry in some butter and fresh garlic. little salt and pepper. just a little re heat some light browning. dont dry it out!

pull the steak off and lightly toast some thick cut Texas style bread in the same pan

steak on the bread, some dijon mayo. little bit of BBQ sauce.

THE BEST quick easy thing you will ever put in your mouth. steak practically melts.

The salad is awesome it has at least 6 different leaves in it radish- sweet peas - yellow and green beans - the meat and Canadian is just a garnish…lol

I usually stop by Sargent Farms in Milton for large split chicken wings.
Costs about $44 for 5kg box fresh. Use coolers to keep fresh for trip to London.
On sale sometimes, need to call store for weekly specials.
Split into freezer bags and freeze for Friday night wings.

Roast actually turned out edible despite being probably 4 years old. Not great, but much better than it could have been. Made the steak into jerky, it wasn't good at all.

Gonna fry up some Swiss Chard from the COVID garden with tons of butter - cause you can never add too much butter - lots of garlic and some previously cooked Italian hot sausage - then I’m gonna crawl into bed and maybe pull the sheets over the high commanders head…hahaha
